These are closer to store-bought lozenges but much more effective.
What you need
• ½ cup raw honey
• ¼ cup water
• 1–2 tbsp dried herbs:
• Thyme (top choice)
• Ginger (light)
• Chamomile
• Optional:
• 1 tbsp lemon juice
• Powdered ginger or cinnamon (tiny pinch)
Equipment
• Small saucepan
• Candy thermometer (helpful but optional)
• Parchment paper

⸻
Step-by-step
1️⃣ Make a strong herbal tea

• Strain
• You want a very strong tea
⸻
2️⃣ Combine honey + tea
• Add honey to the tea
• Heat gently
• Stir constantly
⸻
3️⃣ Cook to hard-crack stage
• Bring to a slow boil
• Cook until it reaches 300°F (hard crack stage)
OR
• Without a thermometer: drip a little into cold water — it should harden instantly
⚠️ Stir frequently to prevent burning.
⸻
4️⃣ Add extras
• Turn off heat
• Stir in lemon juice or spices quickly
⸻
5️⃣ Drop onto parchment
• Use a spoon to drop small circles
• Let cool completely (10–15 minutes)
⸻
